The Ultimate Lamb Snack Pack

The ultimate fake-away dish to try at home.

Serves: 4
Prep Time: 10 minutes
Cooking Time: 30 minutes

INGREDIENTS

  • 400 g trimmed lamb leg steaks, thinly sliced
  • Juice from one lemon
  • Zest from one lemon
  • 2 Tbsp olive oil
  • 2 cloves garlic, crushed
  • 3 tsp dried oregano
  • ½ tsp cumin
  • ½ tsp cracked black pepper
  • ½ tsp salt
  • 800 g frozen fries or thick-cut chips

To Serve:

  • ½ cup hummus
  • ½ cup grated cheddar cheese or tasty cheese
  • toum (garlic sauce)
  • barbecue sauce and/or chili sauce, optional
  • ¼ cup parsley, roughly chopped
  • 1 green onion, thinly sliced
  • Shredded cos lettuce

METHOD

  1. In a large dish or zip-top bag, combine lemon juice, zest, olive oil, garlic, oregano, cumin, pepper, and salt. Add sliced lamb and coat well with marinade. Refrigerate 2 – 4 hours.
  2. Cook chips according to packet directions. Remove hot chips from oven and pre-heat griller to high.
  3. Drain marinade from lamb. Heat a heavy-based pan or bbq flat plate to high. Cook sliced lamb for 2 – 3 mins, flipping once to sear both sides. Transfer seared lamb strips to a plate.
  4. Spread hummus over the base of a shallow oven-safe dish. Top hummus with hot chips and grated cheese. Place dish under griller for 1 – 2 mins, or until cheese is melted.
  5. Top chips with sliced lamb, garlic sauce, and other sauces of your choice. Sprinkle with parsley and onion. Serve lamb snack pack immediately, with shredded lettuce on the side.
