Wagyu, a masterpiece of marbling and tenderness that embodies the essence of gourmet indulgence. Wagyu beef contains a higher percentage of omega-3 and omega-6 fatty acids and more monounsaturated fats than other beef. This soft fat has a low melting point and not only creates a wonderful texture but also holds most of the flavour. The A5 grading is a Japanese system – the A meaning the carcass yield is the highest possible and the numeric rating relating to beef marbling, colour and brightness of the flesh, its texture and colour, lustre and fat quality. A5 is the highest mark wagyu can score.
Wagyu (和牛 Wagyū, “Japanese cow”) is any of four Japanese breeds of beef cattle, the most desired of which is genetically predisposed to intense marbling and to producing a high percentage of oleaginous unsaturated fat. The meat from such wagyu cattle is known for its quality.
